Traditional Ajarian cuisine is characterised by the variety and diversity of its dishes. Ajarian cuisine used to consist of vegetables and cereals, dairy and meat products. Fish products also played an important role.
The technique of preparing trout was of particular importance.
Seasoned trout was prepared as follows: Clean the trout, wash it and then season it with walnuts, garlic, pepper and coriander. Place the fish on a plate and put it in the air oven. You can also cook the fish in a 'ketsi"- a clay pan or directly on the embers. Finally, season the fish with the spices.
Ingredients you will need:
1. One kilogramme of trout;
2. 150 grammes - walnuts;
3. 30-40 grammes - garlic;
4. 50 grammes - coriander;
5. Pepper, vinegar and salt to taste
